Our Goat Curry is the definition of low-and-slow South Indian cooking. Bone-in goat pieces are braised for hours in a hand-ground masala of roasted whole spices, caramelised onions, tomato, and fresh herbs until the meat is fall-off-the-bone tender and the sauce has reduced into a thick, glossy, deeply spiced gravy. It is hearty, warming, and unapologetically flavourful — the kind of dish that takes all day to make and disappears in minutes. Served with steamed rice or warm roti.

How We Make It
Hours of Slow Braising
The curry simmers for 2–3 hours over low heat so the collagen in the bone-in goat melts into the sauce, creating an impossibly rich and silky gravy.
